I support the need for such a tag. Maybe "lemehadrin min halemehadrin" could be "lemehadrin-min-halemehadrin"? Don't like spaces in enums... Is it possible (and is it common) to have more then one kind of kashrut for the same shop? Would it also be useful to tag if the shop sells dairy or meat foods, or both?
It might be possible to create a broader system to capture the style of food served (Italian kitchen etc.) and standards met: kosher,muslim,vegetarian,vegan,no-dairy etc.

- The cusine type is made by cuisine=*.
