Use school:gender=separate with amenity=school for schools that teach both sexes in the same building or the same school grounds, but they are separated during the courses.
This can be achieved by e.g. different hours for the different sexes, having separate buildings, having all men/boys in one wing and women/girls in another wing of the building, ...
