The key grape_variety=* is a property tag used to specify the variety of grape grown in a landuse=vineyard
The term grape variety actually refers to cultivars rather than botanical varieties according to the International Code of Nomenclature for Cultivated Plants[1], because they are propagated by cuttings and may have unstable reproductive properties. However, the term variety has become so entrenched in viticulture that any change to usage of the term cultivar is unlikely[2].
The tag is a special case of taxon:cultivar=*, see taxon=*.
Tagging
Add the tag grape_variety=* to an area which is also tagged as a landuse=vineyard feature

Note as grape varieties are named according to the rules of botanical nomenclature, the name is a proper name and capitalisation is relevant. They are probably best treated as such 'Merlot' not merlot 'Cabernet Sauvignon' not cabernet_sauvignon, although this is not current practice.
