Use shop=tortilla to tag a shop selling tortillas, in the Mesoamerican sense of the word, to the public. These shops may also be called tortilla factories and should be tagged as shop=tortilla (not man_made=works) as long as they have tortillas for sale on site. Tortillas must be the main and mandatory product sold in the shop, but other related foods and tools used to produce tortillas by hand may be found in these shops.

Tortillas were originally made from nixtamalized maize. This was ground and then kneaded. After the dough was broken into manually manageable pieces, these were flattened or pressed into a shape that was usually, but not exclusively, round. After that, they were placed on a comal over a fire until cooked.

Nowadays, other types of dough can be created from flour, which, fundamentally, comes from specific cereals, commonly corn and wheat. It is also usual now to use electric machinery to produce tortillas at a higher scale.

How to map

Mostly as nodes placed on the main bar where customers are served. Little buildings and relation-buildings can also represent a tortilla shop; in these cases it is important to tag the main entrance. Secondly, mappers should make an effort to specify the cereal=* used to produce these tortillas.

The cereal key to use in combination

This probably will need its own wiki page since it is a rather new key. It was contemplated to use the flour=* key which has been employed a couple of times before, but not all tortillas are made from flour, especially the handmade ones. It is essential to note that this table, taken from the proposal, only covers the two most basic grains used to make tortillas. The values should not be taken as exclusive. Varieties of cereals exist and can be common to produce tortillas, like the blue maize variety (cereal=blue_maize?). It is up to the contributors to expand the possible values of the cereal=* key, since it requires collective knowledge to make an exhaustive list of all possible values.

While "corn" is used in the Wikipedia article, "maize" is the noun used in British English, more formal and closer to the original and scientific name of the plant.

wheat Wheat tortillas are also common in some places. These are called "flour tortillas" (tortillas de harina) in Mexico and the USA, but both are usually made from flour. Flour tortillas sold at some tortilla shops.

Rendering

This is a new addition to the shop group of elements, so, at the moment, it does not have a particular representation in OSM Carto. The following icons have been drawn in order to represent a tortilla shop. Bear in mind, they have not been officially proposed, but if you are looking to support this type of shop in your rendering project, these may be helpful.

Special situations

There are several special situations regarding this shop that are yet to be addressed adequately by the community. Currently, it has been proposed to use the food:tortilla:=* and sells:tortilla:=* namespaces to address some of the most common special situations (see food:*=* and sells:*=*). To indicate tortillas are sold, the in use key sells=* may also be employed. In general, it is recommended to use food:tortilla=* in combination with tortilla shops and sells:tortilla=* when other types of shops like convenience stores, supermarkets and bakeries sell tortillas. The following is a list of example cases.
