The tag industrial=slaughterhouse is a subtag of landuse=industrial, and represents land used for slaughtering in an industrial context (i.e. it is a landuse tag indicating the use of land and not suitable to identify individual features, two slaughterhouses could be mapped on the same object just the same as one).

A slaughterhouse is a place where animals are slaughtered. For places where poultry, such as chicken, turkey etc. is slaugthered, use industrial=poultry_processing.
